The VEVOR FWHB-1619*29 is a tall stainless steel cabinet that keeps cooked food warm until it is served. It has eight removable shelves, a fan heater and an adjustable thermostat. It is designed for catering, schools and cafeterias, and VEVOR also lists home kitchens, for example for large gatherings.

What a food warmer is for

A holding cabinet does not cook food. It holds food that is already cooked at a steady temperature, so a kitchen can prepare dishes ahead of service without them cooling on the counter. Typical uses are trays of pizza, pans of pasta or roasted vegetables, and bread rolls, with the door closed between servings to hold the heat in.

Eight shelves and how much fits

The eight removable shelves each have 3.7 inches (9.5 cm) of clearance, and VEVOR says they take 13-inch pizzas, full-size hotel pans and various trays. Because the shelves are removable, you can take some out to fit taller dishes. That clearance is modest, so deep pans will use up more than one tier. Check the depth of your trays against it.

Heating with a PTC fan

VEVOR specifies a 1300W PTC fan heater. PTC elements regulate their own output as they warm up, which VEVOR says avoids the hot spots and scorching risk of traditional heating tubes. A fan circulates the warm air through the cabinet, described as 360° circulation, to even out the temperature from shelf to shelf. An included spill-proof guard protects the fan from debris and eases cleaning.

Temperature range and protection

The thermostat covers 80°F to 185°F (about 27°C to 85°C). The cabinet has auto shut-off and overheat protection, and a removable water tray adds humidity so food is less likely to dry out. The low end of the range is useful for more than holding. VEVOR lists proofing dough, dehydrating snacks and gently defrosting as further uses. Follow the manual and local food-handling guidance for holding temperatures and times.

Construction and size

The body is thickened stainless steel with a tight-sealing door, which VEVOR says keeps heat in. Stainless steel is the usual material in commercial kitchens because it wipes down easily. The cabinet measures about 29.9 x 25.6 x 58.5 inches (76 x 65 x 149 cm) and weighs 129 lb (about 58.5 kg), so plan its position before it arrives and check that it fits through doorways.

Who it suits

It suits small restaurants, caterers, school kitchens, church or community halls with a kitchen, and households that regularly feed many people. For occasional use at home, its size and weight are probably more than needed.

What to check before you buy

  • Space and access: measure the spot, the door swing and the route to get it there.
  • Power: a 1300W heater needs a suitable outlet; check the manual for the plug type and circuit needs.
  • Tray size: compare your pans with the shelf clearance and shelf width.
  • Local rules: commercial settings may have food-service regulations on holding equipment.
  • Cleaning: check how the water tray, shelves and fan guard come out.
  • Floor: a cabinet this size is best placed on a level, stable floor.
