The VEVOR Chocolate Tempering Machine is a countertop electric melter with two stainless steel pots. It holds chocolate, butter, cream or milk at a steady warm temperature, and is built for cafés, bakeries and home bakers who work with larger quantities. The two tanks let you keep two ingredients ready at once.

Water-bath heating

Chocolate scorches and seizes easily if it gets too hot or touches direct heat. The usual remedy is gentle, indirect warmth, which is what a water bath provides. VEVOR describes a 1500W M-shaped heating tube that warms the water, which in turn warms the pots. The brand says this heats chocolate evenly and improves its fluidity. A maximum water line on the pot wall prevents overflow, and a minimum line prevents dry-burning, which VEVOR says extends the machine's life.

Temperature range

The thermostat is adjustable from 86°F to 185°F (about 30°C to 85°C). That covers a wide range of jobs: holding tempered chocolate, melting couverture, or keeping sauces and cream warm. Be aware that the machine heats and holds temperature, and true tempering of chocolate follows a specific curve of melting, cooling and rewarming that varies by type (dark, milk or white). Look at the chocolate maker's guidance for the temperatures it recommends, and use the dial accordingly.

Two tanks

Each pot holds 3.75 qt (about 3.5 L), and the two work independently. VEVOR suggests melting chocolate in one and milk or cream in the other. In practice, that also lets you keep dark and milk chocolate separate without washing pots between batches. The pots are detachable, which generally makes cleaning easier than with a fixed container.

Materials

The body is food-grade 304 stainless steel, a common choice for kitchen equipment because it resists corrosion and wipes clean. A dust cover keeps debris out when the unit is idle. Follow the manual on cleaning, and never immerse the electrical base in water.

Size and weight

It measures about 19.1 x 14.1 x 6.9 inches (48.5 x 36 x 17.5 cm) and weighs 14.3 lb (about 6.5 kg). It needs a solid counter with a free outlet nearby. At 1500W it draws a good share of a standard circuit, so avoid running other high-power appliances on the same one.

What it melts

VEVOR lists chocolate blocks, butter blocks, cream and milk, and presents the machine for family gatherings, restaurants and bakeries. Chocolate fountains, dipping stations, fondue and drinking chocolate service are other everyday uses.

What to check before you buy

  • Capacity: each pot holds 3.75 qt; check that suits your batch sizes.
  • Counter space: allow for the footprint and cord reach.
  • Water level: the bath needs filling to the marked range each time.
  • Power: 1500W needs a suitable outlet and circuit.
  • Temperature needs: compare the 86 to 185°F range with your chocolate's guidance.
  • Cleaning: remove pots to wash; follow the manual for the base.
