The VEVOR B20B is a floor-standing 20-quart mixer for kitchens that work with dough, batter and fillings in bulk. It has an 1100W motor and a stainless steel bowl, and VEVOR lists restaurants, hotels, pizzerias and bakeries as its intended settings.

Motor and gear drive

The 1100W motor drives the attachments through a gear transmission. VEVOR says this achieves fast, uniform mixing. Gear-driven mixers typically handle heavy loads better than belt-driven home mixers, which matters for stiff dough.

Three speeds and what they suit

Speed is fixed in three steps, and VEVOR gives typical uses for each:

  • Low, 130 r/min: kneading dough.
  • Medium, 193 r/min: mixing fillings.
  • High, 458 r/min: whipping cream.

VEVOR advises stopping the machine before changing speeds.

Attachments

Three beaters are included. The dough hook handles heavy mixes such as pizza dough. The flat beater suits mashed potato and vegetables, cake batter and frosting. The wire whisk aerates light mixtures such as whipped cream or egg whites. Using the right tool for each job generally gives a better result and eases wear on the motor.

Capacity

The bowl holds 20 quarts, and VEVOR says the machine can mix up to 3 kg (6.6 lb) of food at a time. Bowl volume and the working load are different things: dense dough fills a bowl far less than a light batter. Check the manual's guidance on maximum dough weight.

Timer and bowl lift

A timer knob sets mixing time from 0 to 30 minutes, after which the machine stops automatically. Instead of a hand wheel, a lever adjuster raises and lowers the bowl, which VEVOR says is quicker. All food-contact parts, including the bowl, hooks and rods, are food-grade stainless steel, which VEVOR describes as rust-resistant, corrosion-resistant and easy to clean.

Size and weight

It measures 21.0 x 18.2 x 30.7 inches and weighs 138.9 lb (about 63 kg). That is a heavy machine, so it is meant to stay put on a solid, level floor.

Who it suits

It suits small restaurants, bakeries, pizzerias and caterers, and serious home bakers with the space and a suitable power supply.

What to check before you buy

  • Space and floor: allow for the footprint, the height and moving 139 lb.
  • Power: confirm the voltage and the outlet needed.
  • Batch size: compare the 3 kg figure with how much dough you really mix.
  • Cleaning: check the manual on cleaning and guard use.
  • Local rules: commercial kitchens may have equipment standards to meet.
