The COWSAR CM8050 is a stainless steel semi-automatic espresso machine with a built-in bean grinder and a steam wand. Putting the grinder in the same body means one appliance can take you from whole beans to a finished cappuccino, which matters in a kitchen with limited counter space.

PID temperature control

COWSAR says the machine uses a PID thermostat system. A PID controller adjusts the heater continuously to hold the water close to a target temperature, rather than switching it simply on and off. Stable water temperature is important in espresso, and different roasts typically do better at different temperatures. COWSAR says the system suits a range of roast levels and brings out more aroma and flavour.

The built-in grinder

The grinder has a grind-size scale knob. Turning it changes the particle size, from finer to coarser. Grind size is one of the main ways to adjust a shot: a finer grind slows the flow and a coarser one speeds it up. The scale lets you note a setting and return to it for a given bean.

Pre-soak and pressure display

Before full pressure, a pre-soak stage moistens the grounds gently. COWSAR says this reduces air bubbles and the chance of channelling, where water finds a path through the coffee and extracts it unevenly. A visual operation panel shows operating data, including changes in extraction pressure as a shot runs. The machine is labelled 15 bar, which describes the pump's maximum rather than the pressure at the coffee, which is typically lower.

Steam wand

For latte, mocha and cappuccino, the steam wand stirs steam through the milk to make denser froth. COWSAR says you can aim for creamy or frothy textures, and that this helps latte art. Expect a learning curve with any steam wand.

Water tank and size

The removable tank holds 75 oz (about 2.2 litres), which means fewer refills. It also comes off for cleaning. The machine measures 13.0 x 13.4 x 15.6 inches, so check cabinet clearance if it will sit under wall units.

Who it suits

It suits home users who want fresh-ground espresso from one machine, and who don't mind learning grind, dose and tamp. If you already own a grinder you like, you may not need the integrated one.

What to check before you buy

  • Height: at 15.6 inches, make sure it fits under shelves, with room to open and fill.
  • Accessories: check which portafilter baskets, tamper and cleaning tools come in the box.
  • Cleaning: a grinder adds parts to clear of coffee oils and grounds, so read the manual on routine cleaning and descaling.
  • Beans: think about how much space the bean hopper needs and how you will keep beans fresh.
  • Power: check the electrical requirements and warm-up time.
